- 2 cups (300g) Coles Brand white plain flour
- 2 teaspoons baking powder
- 3/4 cup (165g) caster sugar
- 1 teaspoon ground nutmeg
- 1 1/2 teaspoon ground cinnamon
- 3 ripe bananas, mashed
- 3/4 cup (180ml) rice bran oil
- 2 Coles Brand Australian free range eggs, lightly whisked
- 1 teaspoon vanilla extract
- 300ml Coles Brand thickened cream
- 1/4 cup (40g) icing sugar mixture
- 1 banana, extra, sliced diagonally
- Golden syrup, to drizzle
Preparation Of Banana cake with cinnamon cream
Start with pre heat oven to 180C. Take 20cm round cake mold and grease line and bottom.
Take flour, baking powder, caster sugar, nutmeg and 1 teaspoon of the cinnamon in a large mixing bowl and combine. Then take seperate bowl and add banana, oil, egg and vanilla, whisk al of them. Pour this mixture onto first mixture that you have prepared and combine them well. Pour in in the mold and bake it for 55 minutes. Leave it for cooling for 5 minutes.
Beat cream, icing sugar and remaining cinnamon in the electric mixer until it becomes soft.
Divide cake in the half horizontally. Pour half the cream between the cakes. Then pour remaining cream on the cake surface. Decorate as you want with banana and drizzle with golden syrup.
