Materials That You Need for Chocolate Brownie Cake
For preparation of Brownie
275g (9½oz) good-quality dark chocolate (at least 55% cocoa solids)
225g (8oz) butter
400g (14oz) caster sugar
5 free-range eggs, beaten
½tsp vanilla extract
200g (7oz) plain flour
For preparation of peanut butter frosting
400g (14oz) full-fat Philadelphia cream cheese
5 heaped tbsp icing sugar
500g (1lb 2oz) peanut butter
50g (2oz) melted dark chocolate and handful honey-roasted peanuts, chopped, to decorate
Preparation of Chocolate Brownie Cake
Preheat oven to 180C. Take 2 20 cm sandwich tins grease the bottom and line with baking paper. For prepare cake; start with melt chocolate and butter on low heat. Wait for few minutes to cool and add sugar. Add eggs and vanilla, stir them well. Add flour in batches and ½tsp salt; mix. Pour this mixture into prepared tins and cook for 20-25 minutes. To understand it is baked or not place a skewer insert the cake; if it comes out clean it means cake is baked. Take the cakes from oven, allow to cool for few minutes into tins. Then remove from the tins to wire rack to cool completely.
To prepare frosting; take cream cheese and icing sugar in a bowl and mix them until mixture becomes smooth. Then stir peanut butter until it completely incorporated.
Take one of the cakes on service plate. Spread half of frosting over and place second cake. Spread remaining frosting over the second cake. Drizzle melted chocolate over the cake for decoration. And place honey-roasted nuts. Keep this cake cold. This cake can be stored in fridge up to 5 days.
