Cookies ‘n Cream Cake (Coconut-Almond)

Cookies’n cream cake is a lovely recipe for special events. You can prefer this cake for wedding anniversary cake. Oreo cookies are used for recipe and make the cake even tastier!

Materials That You Need for Cookies ‘n Cream Cake
500g (18cm round) bought mud cake
200g dark cooking chocolate, finely chopped
250ml (1 cup) thickened cream
1L cookies and cream ice-cream
150g Oreo Classic biscuits, coarsely chopped

Preparation of Cookies ‘n Cream Cake

Use knife to cut icing over the cake. Discard icing and cut the cake horizontally to obtain two layers.

Take one of this cake layers and place into a 20cm springform cake tin. Press over your hand gently to cover the base of thin properly.

Take a microwave safe bowl. Put the chocolate and cream and place into microwave on high to melt chocolate for ganache. Stir every minute to obtain smooth mixture. Take ½ of this ganache with spoon and spread over the cake. Place this cake into refrigerator and wait 1 hours to firm it. Take remaining ganache in a bowl and cover the top with plastic wrap.

Take the ice cream in a mixing bowl. Break up this ice cream slightly with the help of spoon. Wait for 15-20 minutes to soften the ice cream.

Spoon softened ice cream into pan over the ganache, smooth the surface with back of spoon. Cover pan with plastic wrap and put into freezer for 2 hours.

Spoon 1/2 cup of remaining ganache over the layer of ice cream. Place the cake in fridge again 2 hours to firm. Then place the other cake. Press down gently with your hands. Cover the pan and put into freezer for 8 hours or one night.

Whish remained ganache with balloon whisk to thicken it. To place a warm clothe sides on pan make it easier to remove cake from pan. Spread remained ganache over the cake and decorate with biscuits.
