Double Chocolate and Raspberry Cake

Double chocolate and raspberry cake is a delicious cake that is filled with white chocolate. The amazing taste of raspberries are accompanied it. This double chocolate and raspberry cake is perfect wedding anniversary cake with taste and beautiful appearance.

Materials That You Need For Double Chocolate and Raspberry Cake
For Preparation of Cake
200g self-raising flour
25g cocoa
1 teaspoon baking powder
225g butter, at room temperature, plus a little extra for greasing
225g caster sugar
4 eggs
For Preparation of Filling
200g white chocolate
300ml double cream
1 teaspoon vanilla extract
300g fresh raspberries

Preparation of Double Chocolate and Raspberry Cake

Start with pre heat oven to 160C.

Take a 23 cm springform cake tin and grease lightly the bottom. Then line the bottom with non-stick baking paper that provide sticking of cake.

Take flour, cocoa and baking powder and sift all of them in a mixing bowl. Take butter and sugar to another mixing bowl and mix them with electric mixer until mixture becomes pale and fluffy.

Beat 1 egg then add a spoonful of the flour mix, add the eggs and flour gradually into the mixture and combine them for smooth mixture.

Spoon this mixture into prepared springform tin. Smooth the surface of cake. Then bake for 35-40 minutes.

Leave the cake for cooling for 15 minutes in tin. Then carefully remove from the tin and transfer a wire rack. Leave it to cooling completely.

Take white chocolate and microwave it for 10 seconds to become soften. Shave of the flat side of white chocolate that facing upwards by swivel-bladed vegetable peeler. If the obtained curls are tiny, you should microwave the chocolate again. Then chill these curls.

Take the remaining chocolate and put in a bowl that set over saucepan with simmering water. Whip the cream in the bowl and 2/3 of melted chocolate and vanilla, combine.

Cut the cake horizontally. Take one of them on service plate. Spread half of cream and half of raspberries. Add another cake and make the same.

Decorate with drizzling remaining melted chocolate by a spoon. Then add chilled chocolate curls on top.
