Materials That You Need for Mascarpone-filled Cake with Sherried Berries

For preparation of cake:
2 cups sifted cake flour (not self-rising; sift before measuring)
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 stick unsalted butter, softened
1 cup sugar
1 teaspoon pure vanilla extract
2 large eggs
1 cup well-shaken buttermilk
For berries:
1/2 cup Fino (dry) Sherry
1/2 cup sugar
4 cups mixed berries, cut if large
For preparation of cream:
8 ounces mascarpone (1 cup)
1 cup chilled heavy cream
1/4 cup sugar
For Garnish:
Confectioners’ sugar

Preparation for Mascarpone-Filled Cake with Sherried Berries

Start with prepare cake. Preheat oven to 350°F and take one of 9-inch round cake pan; butter the bottom. Line the pan with parchment paper and butter this paper too.

Sift flour, baking powder, baking soda, and salt in a bowl.

Take another bowl and beat butter and sugar with electric mixer until mixture becomes pale. Add eggs one by one and beat well after every addition. Then add buttermilk mixture beat it with mixer at low speed. Add flour mixture in 3 parts, mix well after each addition to combine.

Pour this batter into pan and smooth the surface. Bake for 35-40 minutes. Then leave it to cool for 10 minutes in pan. Then remove the cake from pan.

Continue with prepare macerate berries. Put Sherry and sugar in saucepan and bring them to boil. Stir mixture until sugar completely dissolves. Take a bowl and add berries; pour hot syrup on them and coat the surface of berries. Wait for 15 minutes.

To prepare cream; beat mascarpone and cream with sugar; use beaters for it. Continue until becomes stiff peaks.

Cut the cake horizontally. Take one of the cakes on a plate. Spread all of the cake over. Then put second cake on it. Decorate the top with berries and Confectioners’ sugar.
