Materials That You Need
For making sponge cake:
- butter, for greasing
- 225 g soft brown sugar
- 4 large eggs
- 250 ml vegetable oil
- 1 tsp vanilla extract
- 175 g self-raising flour
- 75 g cocoa powder
- 1 tsp baking powder
- 1 tsp bicarbonate of soda
- 45 ml buttermilk
- 397 g dulce de leche or Carnation caramel
For the fudge icing:
- 100 g dark chocolate, at least 70% cocoa solids
- 150 g unsalted butter, at room temperature
- 450 g icing sugar
- 50 ml milk
- 2 x 126 g rolos
Preparation for Rolo Cake
Preheat the oven 180C.
Let’s get start with the sponge cake. Beat soft brown sugar and eggs together with electrical mixer until it loks pale and like creamy. It takes approximately 4 minutes.Then add gradually vegetable oil and vanilla, then continue mixing.
Sift flour, cocoa powder, baking powder, bicarbonate of soda ad mix all of them with spoon by yourself. Add pich of salt to mixture stir in the buttermilk until all of them mixed well.
Divide this cake mixture equally to the two 18cm sandwich tins. Bake the cake for 30 minutes.After they cooked, let sponge cakes to cool.
Now, we will prepare fudge icing. Melt chocolate by double boiler method. Tke the butter into mixer’s bowl and whip it until it gets fluffy with gradually adding sugar. Then add melted chocolate on it and mix two of them well.
Take one of the cake as bottom layer and spread caramel sauce.Take second cake and place on first one, pour the half of fudge icing over the cake. Cover all surfaces.
Heat the remaining caramel sauce and leave it for cooling. Take the Rolo’s fır decoration of top of the cake. Then finally add the cooled caramel sauce.
Rolo Cake ready to serve.
