Materials That You Need for Simnel Cake
Melted butter, to grease
175g butter, at room temperature, cubed
160g (1 cup, loosely packed) brown sugar
4 eggs, at room temperature
250g (1 2/3 cups) self-raising flour
1 tablespoon golden syrup
1 teaspoon mixed spice
2 375g pkts sundried mixed fruit (Sunbeam brand)
80ml (1/3 cup) milk
2 200g pkts marzipan (Odense brand)
2 tablespoons apricot jam
Preparation of Simnel Cake
Start with pre heat oven to 180C. Take one 20 cm springform cake pan and grease the bottom with melted butter. Use brush for that. Then line the base of pan with non-stick paper.
Beat butter and sugar with an electric mixer until mixture becomes pale. Then add eggs one by one, mix well after every addition.
Add 40 gram (1/4 cup) flour , the golden syrup and mixed spice into the mixture and fold them with wooden spoon. Then sift remaining flour on the mixture too. Add dried fruit and milk into mixture and combine them with a wooden spoon. Pour half of this mixture in pan and smooth surface.
Place a piece of non-stick baking paper to a 5mm-1cm thick 19cm disc, then roll out 1 packet of marzipan with rolling pin on this paper. Place this disc that you have obtained on top of cake mixture. Then add remaining cake mixture with spoon and smooth the surfaces. Bake for 40 minutes in oven. Then reduce heat to 140C and continue baking for 80 more minutes.
Then remove from oven and leave it for cooling 5 minutes. Take remaining marzipan and roll out a 20 cm disc.
Take apricot jam in saucepan and place on low heat. .Heat for 1 minute with stirring to melt the jam. Strain this jam through a fine sieve. Brush the top surface of cake with this melted jam. Then place marzipan disc on top. Trim the edge.
