Strawberry – Elderflower Cake

Materials That You Need for Strawberry-Elderflower Cake
For Preparation of Cake
½ cup (1 stick) unsalted butter, melted, slightly cooled, plus more, room temperature, for pan
1 cup granulated sugar, plus more for pan
1½ cups all-purpose sifted flour
¼ teaspoon kosher salt
6 large eggs
For Preparation of Strawberries And Assembly
1 pound strawberries, hulled, quartered
¼ cup granulated sugar
3 tablespoons elderflower, raspberry, or unseasoned rice vinegar
2 large egg whites
A pinch of kosher salt
2½ cups powdered sugar
Elderflowers (optional; for serving)
Preparation of Strawberry-Elderflower Cake
Start with preheat oven to 350F and grease the bottom of 9 inches cake pan and sprinkle granulated sugar.
Take flour and salt in a bowl and whisk them. Set aside.
Take eggs and 1 cup granulated sugar in a heatproof bowl and whisk. Place this bowl over the saucepan that contains simmering water. Whish continuously to dissolve sugar for 4 minutes. Then take the bowl from heat; whisk with electrical mixer on high speed. Beat 5 minutes until mixture becomes pale.
Add dry ingredients to this egg mixture as 3 additions, and then fold in melted butter. Pour this batter into pan and smooth the surface. Bake for 25-30 minutes.
Put strawberries, granulated sugar, and 2 tbsp of. Vinegar in saucepan and bring the mixture to simmer. Crush strawberries with fork to release juice out. Simmer the mixture for 5-8 minutes to make strawberries soft. Transfer a bowl and allow cooling.
Cut the cake horizontally. Take one of them and spread strawberry mixture over. Then place second cake.
For icing; whisk egg whites, salt, and remaining 1 tbsp vinegar in a bowl, slowly add powdered sugar and whisk. Cover the cake with this icing. Set aside the cake for 30 minutes before decorate with elderflowers.
