Materials That You Need For Watermelon Cake

6.5kg whole watermelon

600ml double cream

60ml (1/4 cup) thickened cream

80g (1/2 cup) icing sugar mixture

2 teaspoons vanilla extract

1/4 honeydew melon, deseeded

1/4 rockmelon, deseeded

Baby mint leaves, to decoration

Preparation of Watermelon Cake

Take a watermelon at least 15 cm high. Then cut the top and bottom of this watermelon. Set aside this sliced top and bottom pieces. Take this watermelon on chopping board as stand upright. Start carefully cut around to remove rind. By this way you can obtain cylinder shape. Cut this watermelon crossway to obtain 3 layers.

Take this all pieces of watermelon on tray. To drain them use paper towel.

Take double cream, thickened cream, icing sugar mixture and vanilla in a large mixing bowl. Beat them with electrical mixer until takes firm peaks form. Take first layer of watermelon on service plate and spread a little amount of mixture over. Then place the second layer of watermelon. Spread this mixture again and finally place th last watermelon.

You need to dry outside of watermelon as soon as possible. When it is wet; cream won’t stick and flow out. Spread remaining mixture to cover all over the top and sides of watermelon. Take it to fridge to chill for 10 minutes.

Use a melon baller to obtain melon balls from reserved watermelon to use decoration of the cake. Then apply the same for honeydew and rockmelon. Decorate the top of cake with these balls. You can sprinkle mint leaves before you serve.
