White Chocolate Truffle Cake

White chocolate truffle cake is delicious with ganache and looks really great with decoration. This recipe is proper for special events like wedding anniversary cake.

Materials That You Need for White Chocolate Truffle Cake
200g salted butter, at room temperature
250g caster sugar
1/2 teaspoon vanilla extract
2 eggs
1 2/3 cups (250g) self-raising flour, sifted
205ml milk
135g white chocolate, melted

For Preparation of Truffles (makes about 8)
1/2 cup (125ml) thickened cream
140g white chocolate, chopped, plus extra grated to decorate
1 teaspoon Grand Marnier or other orange liqueur (optional)

For Preparation of Ganache
1 1/2 cups (375ml) thickened cream
625g white chocolate, chopped

Preparation of White Chocolate Truffle Cake

Start with truffles. Heat cream in a saucepan on medium heat until it boils. Take chocolate into a heat proof bowl; pour this chocolate on heated cream. Stir until mixture becomes smooth. Add liqueur if you use and stir well. Chill this mixture for 6-8 hours. Then roll the truffle mixture by your hands or 2 teaspoons. Make 8 of 2 cm balls and then roll them on grated chocolate. You can keep it up to 2 days in airtight container.

To prepare ganache heat cream over medium-low heat until it boils. Take chocolate into a heat proof bowl and pour over the heated cream, stir to make it smooth. Chill for 6-8 hours to thickening.

Preheat oven to 160C and grease 3 20 cm springform cake pans. Line the sides and bases.
Take butter and sugar by electric mixer until it becomes pale. Add vanilla and then add eggs one by one; mix well after every addition. Add one-third of the flour to this mixture and stir, then add half the milk. Beat remaining flour. Then gently beat melted chocolate too. Pour this mixture to prepared pans and bake for 25-30 minutes. Allow cooling for 5-10 minutes in pans then remove from pans.

Take one of the cakes on plate and spread ganache. Then place second cake spread ganache again remain three-quarters of the ganache. Place last cake. Use this remained ganache for cover all over the cake. Decorate with truffles that you have prepared.
